Protein pancakes with chicken sausage

My batter is two cups of oats, two cups of egg whites, two cups of cottage cheese, blended, cooked like any pancake. It makes about ten, and the rest keep in the fridge for the week.

What you need

  • 2 cups old-fashioned oats
  • 2 cups egg whites
  • 2 cups cottage cheese
  • Butter or spray for the pan
  • To serve: raspberries, a spoon of plain Greek yogurt, 3 chicken breakfast sausages

How I make them

  1. Blend the oats, egg whites and cottage cheese until smooth.
  2. Cook like any pancake on medium heat. Flip when the edges set.
  3. Two pancakes with raspberries and a spoon of Greek yogurt, plus three chicken breakfast sausages: about 40 grams.

Why this one

Breakfast is where the number gets lost. Toast and coffee is about five grams. This is forty, in the same amount of time.

Grams are estimates from standard labels. Your brands will differ a little. Protein first on the plate.
